Eggplant Timbales


Eggplants           2 Nos.
Olive Oil           2 Tbsp.
Salt & Pepper       To Taste.
Bread Crumbs        1/4 Cup.
Mozzarella diced    11/4 Cup.
Tomato Sauce        2 Cups.
Basil leaves        Decorate.

Method :  

Preheat Oven to 400°F.Brush 6 ramekins with olive oil & coat with Bread Crumbs.
Slice 1 Eggplant to thick strips lengthwise & other into thick rounds.
Arrange them into baking sheets,brush with oil & season with Salt & Pepper.
Bake 8-10 min or till tender. Lower the oven to 375°.

Assembling the Timabales. :  

Line eacn ramekins with 3 strips of Eggplant ,allowing to hangover the edges.
Add 1 Tbsp of sauce,mozzarella & cover with round.Repeat 2 more times.
Bring the overhanging strips over the filling to enclose it.
Bake for about 30 minutes,cool 10 min. Unmould onto a plate.
Drizzle with sauce around & decorate with Basil leaves.
