Ratatouille (pronounced ra-tuh-too-ee)
Ingredients Oil 2 Tbsp. Small Onion 1 No. Minced. Garlic clove 1 No. Minced. Eggplant small 1 No. Diced. Zucchini 1 No. Peeled & Diced. Tomatoes Large & firm 2 Nos. peeled & Diced. Green Bell Peppers 1 No Diced. Salt Acc to Taste. Ground Cumin Powder 1 Tsp. Ground Coriander powder 1 Tsp. Chilli powder 1 Tsp. Sugar (optional) 1/2 Tsp. Cilantro AS Garnish. Method Peel the tomatoes by dipping in hot water then cooling in cold water. Remove the skin, & dice the tomatoes. Sprinkle salt over eggplant,Zucchini & let stand for 30 minutes. Drain & pat dry on Paper towels. Heat Oil in a pan ,add onions fry till translucent , add garlic & stir. Mix in the eggplant,Zucchini & cook . Add peppers,tomatoes,salt & cover. After few minutes,open the lid & ,add all the powders to combine. Add water if the veges stick to pan or too thick. Adjust the seasoning & Garnish with Cilantro . Serve as side dish for Rice & Enjoy.
