Tomato medium size 4 Nos
Onion 1 No Chopped lengthwise.
Green serrano chilies 2 Nos or To Taste.
Salt To Taste.
Basmati Rice 1 Cup.
Curry Powder 1 Tbsp.
Butter/Oil 2 Tbsp.
Cilantro leaves 1 Tbsp. Chopped for Garnishing.
Roasted Cashew nuts 1/4 Cup For Garnishing.
Wash the Rice under Running water & Drain.
Puree Tomatoes,Chillies , Curry Powder & salt.
Heat a pan/cooker with Butter,add Rice & stir to coat the rice.
Mix in 1 3/4 Cups of Tomato Puree.If less/thick add water to puree.
Cover & cook on slow fire ,stirring once half way through.
Heat another pan with oil, & cook the Onions till golden brown.
When the rice is almost done,add cooked onions & switch off the flame.
when cool take the rice in microwable bowl & cook for 8-10 miutes .
Garnish with Cashew nuts.cilantro leaves, & enjoy with Vegetable Kurma
