Tomato Sabji
Ingredients:
Tomatoes 1/2 kilo /1 Pound
Onions 1 medium size
Cream 2 table spoon
Roasted Peanut Powder 2 table spoon
Jira/Cumin seeds 1 tsp
Mustard seeds 1 tsp
Curry leaves 1 sprig
Chilli Powder 2 tsp
Green Chillis 1 vertically slit
Oil 3 table spoon
Jaggery/Brown Sugar 2 table spoon
Ginger-Garlic paste 1 table spoon
Kasuri methi 1 tea spoon
Salt to taste
Finely chopped coriander for the garnish
Method :
Heat oil in a pan. Add seeds,green chillies, ginger-garlic paste, curry leaves.
Add Onions & Saute till the onions turn pink. Add the tomates and the salt.
Fry till 3/4th done.Mix in cream, groundnuts,red chilli powder & kasuri methi.
Cook till done fully.Garnish with coriander leaves and serve hot.
