Eggplant Pasta Salad

Rotini Pasta

Rotini pasta     1  8 oz Packet.
Oil              2 Tbsp.
Garlic Cloves    1 No minced.
Eggplant small   1 No diced.
Tomatoes chopped 2 Cups.
Olives Chopped   1/2 Cup.
Corn             1 Cup.         
Salt &
Red pepper flakes To Taste. 

Method :  

Cook Rotini according to Packet direction.Drain & set aside.
Heat oil in a skillet, Saute garlic ,add eggplant & cook till browned.
Add tomatoes,corn,olives,salt,pepperflakes.Cover & cook till corn is tender.
Toss in  Pasta & serve immedietly or at room temparature.
